【Abstract】

<正>Sugar fatty acid esters(SFAEs)are biocompatible surfactants that can be produced from naturally renewable resources and have found broad applications in food,cosmetic and pharmaceutical industries due to their excellent features.Because of the advantages over chemical approaches,the topic of enzymatic SFAE synthesis has gained renewed interest recently,particularly prompted by the emergence of ionic liquids(IL)and deep eutectic solvents(DES)as attractive"green"reaction media for carbohydrate biotransformation.
